Italian Zucchini Side Dish
This is a stress free side dish that you'll love with your whole HEART! That's right, this dish promotes heart health. Lypocene from tomatoes and potassium from the zucchini makes sure your heart is functioning optimally. And it remains a stress-free dish because of how easy it is to prepare. So all the stresses of life can deminish by adding Italian Zucchini into your diet. Not to mention the flavor factor. 

Use your homemade marinara with this recipe. Or keep it more simple by using an organic jarred brand. Either way, you'll be happy you tried this great dish.

Ingredients

1 medium onion, chopped
2 Tbls olive oil
3 cups zucchini, sliced
1 cup red pepper, sliced
1 1/2 cups marinara (here is the one I use)
1/4 cup parmesan cheese, shaved
Salt & Pepper
Fresh basil
Instructions

STEP ONE:
Heat skillet over medium heat and add chopped onion. Cook until translucent - about 5 minutes. Salt and pepper onions.

STEP TWO:
Layer sliced zucchini and peppers over the onion, add the marinara then stir. Cover and simmer for 5-7 minutes. The veggies should be tender but still firm when they are done.

STEP THREE:
Test and re-season if needed. Top with basil and sprinkle with parmesan. Serve. 

SERVING SUGGESTION:
Serve along side grilled chicken or Chicken with Rosemary Cream. Or for a Vegetarian Option, serve over short grain brown rice for a complete meal.
