Ingredients 1 medium onion, chopped
2 Tbls olive oil
3 cups zucchini, sliced
1 cup red pepper, sliced
1 1/2 cups marinara (here is the one I use)
1/4 cup parmesan cheese, shaved
Salt & Pepper
Fresh basil
Instructions
STEP ONE:
Heat skillet over medium heat and add chopped onion. Cook until translucent - about 5 minutes. Salt and pepper onions.
STEP TWO:
Layer sliced zucchini and peppers over the onion, add the marinara then stir. Cover and simmer for 5-7 minutes. The veggies should be tender but still firm when they are done.
STEP THREE:
Test and re-season if needed. Top with basil and sprinkle with parmesan. Serve.
SERVING SUGGESTION:
Serve along side grilled chicken or Chicken with Rosemary Cream. Or for a Vegetarian Option, serve over short grain brown rice for a complete meal.
