Summer! What Summer?!

M

y kids went back to school on Monday. At this point, a lot of moms consider this the beginning of happiness; hopeful; the most wonderful time of the year. I've been there MANY summers! But, now that my kiddos are 11, 12, 15 & 19, summers can’t go slow enough.

 

Yes, there are stressful days where the kitchen never seems clean, the door never stays shut and the sighs of boredom are countless. But for the most part, they are outside in the scorching heat playing football, riding bikes, swimming, and having a nighttime man hunt with neighborhood kids.

Overall, summer whizzed by too quickly! We got to celebrate our daughter’s birthday, hop over to Orlando for a vacation, send my husband and two oldest boys to Daytona for a weeks of fun, enjoy sleeping in/staying up late, and several trips to the beach. With my husband working full time and me working part time, our kids at home and juggling our Now Go Cook fun, summer just wasn’t long enough. I want more. 

But wait. We live in Florida! It’s hot way into October/November! We can continue the trips to the beach, backyard BBQ’s and evening bike rides for months to come! So yes, they go back on Monday. But I declare we keep a “SummerTude” (summer attitude) for many more months. No matter where you live, think up creative ways to keep summer alive. 

Here’s the refreshing salad I’m serving with our grilled chicken tonight to help keep our summer alive, try it and let us know how you like it!
