Turn an every day tasty dinner into a super fun, memorable experience simply by adding... a stick. Part of our Fantastic Finger Foods series, these Greek influenced turkey skewers are fun to eat and fun to make. The love for greek food such as Gyros and other tasty treats led to this recipebut with a lighter approach.

Rather than the lamb in traditional greek foods we wanted to use ground turkey along with a few other ingredients that add to taste but also add to your health. This finger food is a gluten free, whole food, fresh alternative to a gyro or souvlaki typer skewer accompanied by a light greek style yogurt dip for extra fun.  

An alternative to other meats on sticks?

Maybe...well yes, but these skewers are nothing without this amazing dipping sauce. Is it an alternative to traditional greek sauces you may ask, not really, more like a departure from the typical.

The chunked Feta cheese that is spread throughout is like a bite surprise each time you get one. This is one recipe that has layers of fun, all controlled with a stick. Enjoy!
Ingredients

SKEWERS

1 cup organic rolled oats
1 egg
2 tsp. dried oregano
1 tsp. cumin
1/4 cup fresh, flat leaf parsley, chopped
1 lb. ground organic turkey
1 cup grated zucchini
Salt and Pepper



YOGURT DIPPING SAUCE

2/3 cup organic, whole milk greek yogurt
1/4 cup cucumber, grated
1/4 cup feta
Salt and Pepper
Preparation Instructions

SKEWERS

STEP ONE: Put the rolled oats in a food processor until it become bread crumb size. Add to a bowl with all other ingredients. Use a fork (or your hands) to mix it up.

STEP TWO: Shape into loaves that will fit on your skewers. Bake at 350 for 12 minutes without the skewers in.

STEP THREE: Grate cucumber and put into a paper towel to absorb the liquid from the cucumber.

STEP FOUR: Add the rest of the ingredients to a bowl and smash together with a fork. Add in cucumber once it’s dry. Salt and Pepper to taste. STEP FIVE: Put the skewers in the oven at 350 (make sure to preheat). Cook for 15 minutes.

STEP SIX: Remove turkey from the oven. Skewer each one and display on serving tray.

SUGGESTIONS: Serve with slices of cucumber and red ripe tomato. Also terrific over a bed of spring mix.

RECIPE NOTES: If you prefer, choose a ball shape instead of the loaf shape. Add 2 or 3 per skewer. Greek yogurt has the most kick. Use plain (non-greek) yogurt for a milder flavor.
FRESH FETA - The Now Go Cook kitchen prefers fresh feta from whole goats milk. We purchase ours from a wonderful source, Eli’s Produce. They buy it from a dairy right near us in Tampa, Florida. The flavor is amazing and I trust it far more than what’s available in the regular grocery store. Go on a feta hunt. Try a larger health food store chain, a local farmers market, or see if you can find a direct source!

ROLLED OATS - Because we use oats in this recipe instead of bread crumbs, these turkey skewers are gluten-free! There has been some question about oats containing gluten. So here is our short answer - YES, they are gluten free. Check out the link below to read a bit more about rolled oats.
