Italian Zucchini Side Dish
1 medium onion, chopped
2 Tbls olive oil
3 cups zucchini, sliced
1 cup red pepper, sliced
1 1/2 cups marinara
1/4 cup parmesan cheese, shaved
Salt & Pepper
Heat skillet over medium heat and add chopped onion. Cook until transluscent - about 5 minutes. Salt and pepper onions.
Layer sliced zucchini and peppers over the onion, add the marinara then stir. Cover and simmer for 5-7 minutes. The veggies should be tender but still firm when they are done.
Test and reseason if needed. Top with basil and sprinkle with parmesan. Serve.
Serve along side grilled chicken or Chicken with Rosemary Cream. Or for a Vegetarian Option, serve over short grain brown rice for a complete meal.
