Layered Greek Hummus Dip

We always bring something with us when we’re blessed with an invitation to dinner. In this case, we were invited to “game night” at some friends house with a few other couples. We are ready for a night of giggling! I know the host is making a crock pot of soup, so I’ve chosen an appetizer style finger food that everyone can enjoy. And I’ve got to say, I’m excited! This Layered Hummus Dip is so impressive looking and once they taste it, I know they’ll be hooked.

Ingredients

Basic Hummus recipe (with jalepeno)
1/2 cup cucumber, chopped
1/2 cup green pepper, chopped
1/2 cup greek olives, pitted and chopped
1/2 cup tomatoes, chopped
1/2 cup feta cheese, crumbled
1/2 cup red onion, chopped fine
1/4 cup jarred beets, patted dry and chopped fine 
Instructions

STEP ONE:
Start by chopping up all the ingredients.

STEP TWO:
Spread hummus on the bottom of a pie plate, or any other shallow dish. Then layer each ingredient on top. If you choose to use beets, use that as the final ingredient. It is a pretty topping!

SERVING SUGGESTION:
Serve with fresh vegetables like celery, carrots and cucumber circles. Also, grilled whole wheat pita bread quarters are delicious if you're not avoiding whole wheat flour.
We Cranked up our Already Great Hummus

Our Simple Hummus recipe was already pure and simple and had none of that chemical taste like store bought versions which are laden with Canola Oil amongst other ingredients which defy health. So why in the world did we feel the need to jump over the top with the Hummus, because we could...so we did! Try this dip next time you want to ramp up the flavor. Once you add the layered ingredients there is no coming back. Every bite is addictive and has depth. I have ZERO doubt you will enjoy.
