Watermelon Arugula Salad
Ingredients
6 cups watermelon, cubed into small bites
2 cups blueberries
5 oz. arugula
6 oz. feta cheese
½ cup raw almonds, sliced (I buy them pre-sliced)
½ cup grape seed or olive oil
1 lime, juiced
1 tsp. Honey
1 garlic clove
Salt & Pepper

Instructions

STEP ONE:
Make dressing by adding all ingredients to a blender and pulse until smooth and creamy.

STEP TWO:
Pour dressing over the salad ingredients. Done. NOTE: Chill for 30 minutes if your watermelon was not already cold.

SERVING SUGGESTION:
Chill salad ingredients before making. After you mix it together, serve immediately. Cool and sweetly perfect along side grilled chicken.
